Ingredients
Lemon Chicken:
1 Lemon
¾ cup olive oil
2 tsp. salt
1 tsp. fresh ground pepper
2 tsp. thyme
4 boneless skinless chicken breasts
Satay Dip:
1 Tbsp. olive oil
1 Tbsp. dark sesame oil
¾ cup small diced red onion
2 cloves of garlic, minced
2 tsp. grated fresh ginger
¼ tsp. crushed red pepper flakes
2 Tbsp. red wine vinegar
¼ cup light brown sugar
2 Tbsp. soy sauce
½ cup sesame paste (tahini)
¼ cup ketchup
2 Tbsp. dry sherry
1 lime
Directions
Lemon Chicken:
Whisk together juice of lemon, olive oli, salt, pepper and thyme. Add chicken and marinate in refrigerator for 6 hours or overnight.
Cook chicken on BBQ about 10 minutes per side, depending on thickness of chicken, until cooked.
Satay Dip:
While chicken is cooking on BBQ, in a heavy sauce pan add olive oil, sesame oil, onion, garlic, ginger, pepper flakes. Cook on medium heat until onion is transparent, 10 to 15 minutes. Whisk in the vinegar, sugar, soy sauce, sesame paste, ketchup, sherry and lime juice; cook for 1 more minute.
Serve either hot or cold with BBQ chicken.

Ingredients
2 boneless skinless chicken breasts
2 tbsp. no-fat yogurt
¼ tsp. dijon mustard
Pinch of garlic powder
Salt and Pepper
¾ cup corn flake crumbs
1 tsp. vegetable oil
Directions
Preheat oven to 450°F.
In a small bowl mix together yogurt, mustard and seasonings.
Dip chicken into yogurt coating both sides, then dip into cornflake crumbs. Place chicken on non-stick baking sheet.
Drizzle oil on each piece of chicken. Bake for 8-10 minutes until browned. Turn chicken over and continue baking for another 10 minutes. For thick chicken, bake for 25-30 minutes.

Ingredients
2 tbsp. butter
2 medium onions, chopped
6 medium potatoes, peeled and chopped
2 cups chicken broth
3 cups milk
1 cup shredded cheddar cheese
pepper
Directions
Saute onions in butter until onion is soft. Add potatoes and chicken broth.
Cover pot and simmer until potatoes are very tender (approx. 30 minutes). Puree in blender or food processor until soup is smooth and return to heat.
Stir in milk and cheese, heating until cheese melts.

1 package Oktoberfest sausage
1 onion (chopped)
1 clove garlic (crushed)
1 tsp Italian seasoning
1/4 tsp crushed red pepper
1 tbsp cornstarch
2 c. milk
1 can tomatoes
250g penne (uncooked)
1 c grated mozzarella
Cut sausage into 1″ pieces and fry on med-high until browned. Add onion, garlic, seasoning and red pepper and cook until onion is tender. Stir in cornstarch and milk until mixture boils and thickens. Add tomatoes and (uncooked penne). Return to a boil, cover and simmer until pasta is tender (~15 mins). Sprinkle mozzarella ontop and serve.

2 tbsp veg. oil
1 package stewing beef
3 tbsp flour
can of tomatoes
2 c. water
worchester sauce
onions and garlic
carrots and other veggies (use more water if potatoes are used)
Optional veggies:
potatoes
mushrooms
beans
peas
Heat oil and add meat. Cook on med-hi to sear it and add flour. Cook for a few mins until is browns on the pan. Add water and scrape all the browning off the bottom of the pan and mix into the water. After it boils turn down to low and add tomatoes onion and garlic. Simmer 2-3 hours adding veggies at the end of cooking time.
To thicken mix 2 tbsp of flour with water to make a thin mixture. Stir into bubbling stew (after dumplings are cooked!).

Marinade:
3 tbsp fresh lemon juice
1 tbsp olive oil
1/2 tsp oregano
1/4 tsp salt
1/4 tsp pepper
1/2 tsp thyme
1/2 tsp basil
1/2 c chicken broth
Put on skewers with onions, mushrooms and peppers. Barbecue for 10-15 mins. Serve with tzatziki and rice.

6 chicken breasts
1 tsp lemon juice
1 clove crushed garlic
2 c sliced mushrooms
250 mL sour cream
dash of paprika
Place chicken in a casserole dish. Cover with sliced mushrooms, and the rest of the ingredients. Sprinkle with paprika. Bake @ 375 for an hour.

Marinade:
2 tbsp dry sherry
1 tbsp soy sauce
In a pan heat:
2 tsp sesame oil
1 tbsp ginger (grated)
Add chicken and cook for 8 mins turning once.
Combine and add to chicken:
1/2 low sodium chicken broth
2 tbsp lemon juice
2 tsp cornstarch
Cook until thickened. Serve over rice.

A low fat dish that is one of my favourites.
Brown pork chops in a frying pan until partially cooked.
Add:
1 c chopped onion
1 crushed garlic clove
1 c. sliced mushrooms
Mix and add:
1/2 c water
2 tbsp soy sauce
2 tbsp apricot jam
6 tbsp ketchup
3/4 tsp sesame oil
1/2 tsp powdered mustard
Simmer 15 mins and serve over rice.

This is a low fat dish, but is quite good.
Mix Together:
3 tbsps plain yogurt (or buttermilk)
1 1/2 tsp lime juice
1/4 tsp dijon-style mustard
one clove garlic (crushed)
dash of salt and pepper
Dip chicken in yogurt mixture and then in crushed corn flakes.
Place on racks on a foil lined baking sheet. Bake @ 450 for 25-30 mins.
