Butter Tarts

This recipe makes filling for 12 tarts.

If using raisins soak them in warm water for about five mins so they are nice and plump.

Filling

Melt together:

1 c. brown sugar
1/2 c. corn syrup
1/4 c. butter
2 tbsp water or milk

Mix together in small mixing bowl:

2 eggs
1/2 – 1 tsp. salt
1 tsp. vanilla

Slowly add melted mixture to egg mixture.

soak 1/2 c. of golden raisins in warm water for 5 mins. then drain.

Put a few raisins in the bottom of each tart shell. Fill tarts half way and then fill to the top.

Bake at 350 for about 20 mins or until they are bubbly.

"Skor" Bars

Line a cookie sheet with tin foil (shiny side down). Fill with soda crackers.

Melt:

1 c. butter
3/4 c. brown sugar

Let it come to a boil and pour it over the crackers. Bake at 350 for about 7 min until it is bubbly and brownish. Cover with melted chocolate chips and chill in fridge. Break into pieces and serve.

Julie's World Famous Granola

Mix Together:

6 c. rolled oats
1 c. wheat germ
1 1/2 c. raw sunflower seeds
1/2 c. bran
1 c. currants
1 c. dried cranberries
1 c. almonds, roasted and chopped
1 tsp. salt

Heat:

1/3 c. oil
1/2 c. brown sugar
1 tsp. vanilla
2 tbsp. water

Add wet to dry ingredients. Spread out on baking sheets.

Bake at 325 for 20-30 mins. (turning once halfway through)

or Convection bake at 325 for 11-14 mins

Serve with plain yogurt on sliced bananas. Yum!! Or the old fashioned way with milk.
